Spinach Cheese Appetizers
Flavorful spinach and cheese appetizer. This is a modified version of a recipe from one of my aunts.

Ingredients
  1. 4 eggs
  2. 2 (10 oz) packages frozen chopped spinach, thawed and drained
  3. 1 cup finely chopped onion
  4. 3/4 cup butter or margarine, melted
  5. 1/2 cup grated parmesan cheese
  6. 1 cup grated cheddar cheese
  7. 1/2 teaspoon garlic salt
  8. 1/2 teaspoon thyme
  9. 2 cups herb stuffing
Instructions
  1. In a large bowl, beat eggs lightly.
  2. Add remaining ingredients
  3. Mix thoroughly.
  4. Shape into balls about the size of walnuts.
  5. Refrigerate 30 minutes before baking.
  6. Place on ungreased cookie sheet.
  7. Preheat oven to 350 degrees.
  8. Bake for 25 minutes.
Notes
  1. *Temperature and baking time may need to be adjusted for higher elevations.
  2. I find that I have to refrigerate the mixture a little before I shape them into balls. Otherwise they don’t form as easy.
