Ingredients
  1. 3 (16 oz) cans chili beans
  2. 3 (16 oz) cans diced tomatoes
  3. 1 (16 oz) can of whole kernel corn
  4. 1 medium to large yellow onion
  5. 1 medium to large bell pepper (green)
  6. 1 package chili seasoning (or chili powder to taste)
Instructions
  1. Finely chop onion and bell pepper.
  2. Add to a pot of boiling water (3-4 cups).
  3. Boil until onions and bell peppers are soft. Add more water if needed.
  4. Drain with a fine colander.
  5. Drain the can of corn.
  6. Mix all ingredients together in large pot on medium heat.
  7. Stir often to avoid scalding the bottom.
  8. Let reduce to desired consistency.
Notes
  1. If you want to add ground beef, cook and drain one pound of ground beef and add it when you mix all of the ingredients in the large pot.
